Cranberry Turkey Puff Pastry Bites

I don't think the pilgrims had a U-Bake where they could pick up some fantastic puff pastry sheets but if they did....I'm sure they would enjoy these little bites.  They are delicious & make the cutest little sandwiches using leftover Thanksgiving turkey and cranberry sauce.

Prep Time: 25 minutes

Cook Time: 20 minutes

 

Ingredients:

1 sheet frozen Large U-Bake puff pastry, thaw it on a ungreased cookie sheet.

1-1/2 cups finely chopped cooked turkey

3 Tbsp. Mayonnaise (I use light)

2 Tbsp. sour cream (I use light)

1/3 cup whole-berry cranberry sauce

1/4 tsp. U-Bake Ground Ginger

Preheat oven to 375 degrees. Cut the sheet into 9 even squares. Bake on cookie sheet for 20-25 minutes until puffy and brown. Cool slightly. While still warm, split each pastry into 2 layers. Cool completely on wire racks.

Meanwhile, mix chopped turkey, mayonnaise, sour cream, cranberry sauce, and ginger in a small bowl. Spoon turkey mixture onto the split side of each baked and cooled puff pastry square, top with another, and serve. Serves 4.
